Picked up call ahead/ to go. Had a beer and talked with Coleen when I arrived. Pizza was ready but cold beer and conversation sounded good. Coleen is a gem and of course the Traffic Jam with extra pepperoni was super tastee. Thank you Proto’s!
You thought you liked another pizza place until you tried Proto's; now you loathe that other place. Proto's is undoubtedly the best Neapolitan pizza you can get in Longmont. Probably all of Boulder county. Fresh toppings, perfectly balanced sauce, and a crust that may or may not have crack in it. Absolutely perfect. One day they'll get a bigger storefront I'm sure, because this place is packed! The take out salads have room for improvement is my only gripe. Pretty sad and served in an awkward container.
Glad I found this place on the way back to Denver. Excellent pizza with a fantastic thin crust and a nice crunch. Food overall was excellent and staff was great. Love the Proto pie! So good!
I’m eating at my favorite pizza spot, Proto’s Pizza. The pizza oven was imported from Italy. The thin crust pizza cooks in a flash. I ordered the Vanilla Italian Cream Soda. Made with vanilla Monin syrup and just a splash of half and half. The starter was a fresh Caprice salad with thick slices of tomato and mozzarella. The pizza was the Traditional, homemade tomato sauce and mozzarella cheese. Can’t get more simple. The twist is the shredded mozzarella cheese is famous Bocio Cheese, which has a splash of Buffalo milk added. A delicious creamy cheese. I watched a Margharita D.OH.C. boxed up. It was unlike any margharita pizza I’ve ever seen. Chuncks of tomato, with the basil added AFTER baking. I try that one next time! I can recommend the original Proto’s Pizza with the highest quality. Ps: the same manager has been running the restaurant since the day it opened in 1999. She deserves a raise!
I stopped in last week to give this place a try and I must say it absolutely exceeded my expectations. The service was exceptional, the waitress was such a sweetheart and made my dining experience even more amazing. My pizza was delicious, the cheese was hot and perfectly melty, I loved the sausage slices rather than ground sauce, the sauce was full of flavor and not bland like some places in the area and I loved the flavor of the crust and I’m usually not a fan of thin crusts but i absolutely loved it. Will absolutely be coming back again and probably ordering out to take home to my family as well
Our first time at Protos and we were very impressed! We were not expecting such an incredible high-quality meal. The pizza reminded me of pizza I've had in NYC! Our salads were very tasty. Service was great! We will definitely return very soon! Yum!!

hey! i am a pre-teen picky eater wanting to give some insight that’s from a different point of view! i just want to say THIS PLACE IS AMAZING!!! i came here with my dad thinking it would just be any regular pizza place, and WAS I WRONG. they have one of those fancy pizza ovens which makes the dough very crunchy, but like crunchy in a good way. i got the white pie with ham and it was DELICIOUS!!! i usually am very very VERY picky about where i eat (especially when it comes to pizza), but this place is great and i ate the whole pizza. the atmosphere is fun and wasn’t too loud to the point where you can’t have simple conversations and it wasn’t overwhelming at all. as someone who’s taller than most my age, sitting with an adult who’s taller, i will say the table we were seated at was a bit hard to fit our legs in. i had to turn sideways to fit comfortably without us kicking each other. overall, i would recommend this place if you’re looking for an affordable, fun, and friendly place to have some amazing pizza!!
